A Unique Sugar Bowl and Greek Coffee, Silently Generates More Sales.

The longer you keep a customer in your foodery, the better chance you have of capturing more sales.  It could be an extra cup of coffee or, "what the heck, why not splurge on one of those luscious cinnamon rolls".   The unexpected and the unanticipated is the most fun ever.   Presentation is everything and what customers love most is when heads turn to look at what is being served to them.   It is no secret that we feast first with our eyes, and then with our other senses.  Coffee houses, cafe's, deli's have a big advantage over most eateries, in that the intoxicating smells are able to linger longer. 

1. Briki brewing Greek coffee.  Hummmmmmm good!

There was a marvelous cafe-bistro, that served traditional Greek / Turkish coffee, right in the heart of downtown, Atlanta.  The first thing one smelled upon entering, was this amazing coffee!  Unlike Starbucks or Panera.  This was the real McCoy.  Greek coffee is ground to a powder and gives off a marvelous essence, while it is being brewed.

The coffee presentation was absolutely mesmerizing.  A well groomed server carrying an Anatolian tray, with a traditional copper briki, (ladel shaped coffee brewer) along with a glass sugar bowl, filled with rock crystal sticks, would deliver our coffee.   He would then pour our coffee into the warmed demitasse cups, asking each guest to select a rock crystal stick, in order to stir into their coffee.  Customers, went absolutely gaga over the entire ritual.  There wasn't a head that didn't turn.

In chatting with the owner, he said that every time a tray of Greek / Turkish coffee goes out onto the floor, they end up with no less than twelve new orders from other guests.  Ah!... mining the deep smarts, is so much fun!  Take a briki, warm demitasse cups, biscotti and a glass sugar bowl, and bam!  Success from a sugar bowl, or you can use your rock crystals to stir your latte or cappuccino.  Whatever strikes your fancy.

Do the unthinkable.  Do the unbelievable and most importantly, enjoy doing it!  Your customers will love it... isn't that the point?
